Cover the container, and leave it alone for 12 to 24 hours. Then rinse the vegetable with cold water. Afterward, mix the vegetable with garlic, ginger, red pepper powder, sugar, and scallions. Put the mixture very tightly in a glass jar. Cover the jar. Put the jar in a cool, dark place for at least a day. Uncover the jar for a few seconds, and then cover it again. Put the jar in a refrigerator. Wait at least two days before eating the kimchi.
